High Protein Lemon "Cheesecake" Bites

This one is tart and refreshing, great for kids, and high in protein - any dessert with lemon is a win in my books. As with most of my baking recipes, you can be pretty flexible with the ingredients and amounts, and combine to your preferences; these are pretty hard to mess up, so the following is a loose intruction manual for these tasty bites!

Serving size: about 12

Time: 10 minutes to make, an hour to set

Ingredients:

  • 1 cup full fat, unsweetened greek yogurt
  • 1 lemon, juiced (you can also include some rind shavings)
  • 1 scoop, vanilla protein powder
  • 1 splash, vanilla extract
  • For base:
  • 1 cup, crushed graham crackers (can use homemade, Paleo, gluten free, or other, whatever you want!)
  • 2 tablespoons (approx) melted coconut oil

Instructions:

  • In a bowl, mix yogurt, lemon juice, protein powder and vanilla extract. Feel free to adjust amounts to taste. Put in the fridge.
  • Add graham crackers to a ziploc bag or bowl and crush into crumbs (I use a bag and the bottom of a mug). In a bowl, mix the crumbs with the coconut oil. Should still be crumbly, but able to form into balls with your hands.
  • Using silicone muffin liners or a silicone mini cupcake liner, press a thin later of the cookie mixer into the bottom of each well. 
  • Add a dollop of the yogurt mixture on top.
  • Place in fridge and allow to set for about 30 minutes; alternatively you can place in the freezer for about 15 minutes to set a little harder, but be careful - leave them too long and they'll be icy which to me negatively effects the texture.

TIP: You can also use sugar-free lemon pudding mix with the yogurt for an even firmer, cheesecake like texture!
